A seasonal salad

These yellow beans make for a lovely salad. Washed and blanched until just tender crisp, tossed with garlic, diced onion, dried oregano, seasoned with salt and pepper and then dressed with olive oil and white wine vinegar, they are a simple yet lovely contorno to grilled steak or spicy chicken.

Can be served at room temperature or slightly chilled.
